Veal rolls are a popular dish in Emilia-Romagna, a rich and fertile area of Northern Italy where veal is a specialty. Serve them with easy parmesan beans and tomatoes.

Here are some helpful hints for preparing them:

  • You can use a good-quality cheddar or Swiss cheese instead of Parmesan.
  • Buy good-quality Parmesan cheese and grate or chop it in the food processor. Freeze extra for quick use. You can spoon out what you need and leave the rest frozen.
  • You can use any type of white canned beans.
  • Make sure the veal cutlets are about the same size. If not, cut the bigger pieces to match the smaller ones. They will cook more evenly this way.
