After a summer of delays and setbacks, the Aussie Cantina is finally ready to open its doors.

Sally Shamrell-Murphy, wife of owner Glenn Murphy, said the restaurant at 1118 E. Sixth St. will launch on Monday, with their Aussie Rolls food truck following suit.

The original plan was to get the truck on the road by mid-summer, then open the Cantina in August just as students were returning to the university.

But a monsoon storm in July caused thousands of dollars in damage to the roof. Then thieves stole the Murphys’ tools and a 20-foot long “Coming Soon” sign.

The Cantina will serve a variety of Australian-themed dishes, including sausage rolls and barramundi.
