Construction has started on a new Paradise Bakery & Cafe, which is going into the long-closed Austin's Old Fashioned Ice Cream near Park Place mall.

The newest Paradise location, at 6129 E. Broadway west of Wilmot Road, is expected to open the third week in March, said Dory Alison, market manager for Paradise Bakery & Cafe.

Traditional Bakery Inc., a Springfield, Mo.-based franchisee of Paradise Bakery-owner Panera Bread, is opening the Broadway Paradise as well as one at Crossroads Festival in the former Buddy's Grill location. That Paradise is slated to open in July or August, Alison said.

Traditional also owns the Paradise Bakery & Cafe at North Oracle and West Wetmore roads. The Paradise location near the University of Arizona is owned by a Phoenix-based franchise.

Alison said each Paradise will hire about 60 people. Three out of four manager positions are already filled for the Broadway eatery, and hiring for key hourly positions will start in a few weeks, he said.

"We're really excited about being in Tucson and opening these other locations," Alison said, adding that Traditional is scouting other sites across Tucson and Oro Valley for more Paradise bakeries.
