A nationally feted pizza chef — the only one in the country to win the coveted James Beard Award — and an emerging celebrity chef who’s making a hard push into Tucson are opening artisan pizza shops here this fall.
Aaron May will open The Heist Pizza Parlour, 7131 E. Broadway, this month. Late this year, James Beard-winner Chris Bianco will open Pizzeria Bianco in a 2,000-square-foot space next to The Hub on East Congress Street.
The Heist will feature single-serve wood-oven-fired pies topped with housemade mozzarella, meats and vegetables. Bianco prepares authentic Neapolitan pizza fired up in a wood-burning oven and topped with house-smoked mozzarella, fresh herbs and cured meats.
