Thanksgiving has become the busiest day of the year at Lovin’ Spoonfuls, the vegan restaurant that Peggy Raisglid opened 2005.

She serves a traditional Thanksgiving menu, which features a “mock turkey” with lemon tarragon sauce taking its place on the plate alongside her holiday favorites — mashed potatoes with savory stuffing, mushroom burgundy gravy, green beans almandine, cranberry sauce, candied yams in orange sherry sauce, and an organic spring mix salad.

Raisglid shared her recipe of the pumpkin pie that she’ll be serving.
