PHOENIX - Arizona jack rabbits are served as Belgian hares in Los Angeles restaurants. They also enter into the composition of chicken tamales retailed in the cafes and by the numerous street vendors of the succulent Mexican delicacy in the Angel City.
During the last three months F.J. List has shipped from Peoria no less than 2,600 dressed jack rabbits. They were consigned to the Zeisel Produce company, Third and Alameda streets, Los Angeles, which paid List from $2.50 to $3.00 per dozen for them. The average is around $2.75.
Say that List averaged only $2.50 a dozen for his rabbits. There are 217 dozen rabbits in 2,600 and at $2.50 a dozen, List received $542.50. But List has to pay the expressage himself. It amounts to about one-fourth his receipts.

Yesterday List appeared at the office of the Board of Supervisors with 2,600 pairs of rabbit ears. Just as soon as these ears have been counted and burned, List will receive $130 in bounty.
