Two friends who once worked together at Fuego are getting ready to open their own restaurant on the east side.
K.C. Combs and Brendan O’Brien plan to open the Dry River Co. at 800 N. Kolb Road early next month.
The space, the former home of Cottage Bakery & Cafe, is undergoing renovations that include adding an old-style wood-burning pizza oven.
Combs said they plan to serve Neapolitan-style pizza, which has a thinner crust than traditional pies.
Dry River will initially open offering breakfast and lunch, adding dinner when the liquor license application is approved, Combs said.
The breakfast menu will include coffee, pastry and breakfast sandwiches.
Lunch will feature pizzas, sandwiches and salads. Dinner will offer a similar menu. Expect the most expensive item on the menu to be about $11.

“We’re going for a fun, casual and comfortable atmosphere,” he said.
In picking that location, Combs said the two liked that Guadalajara Grill has plans to open next door in the former site of Tony Roma’s.
Combs said the name was inspired by the proximity of the Pantano River, which is usually dry most of the year.
